    Prepare the Potatoes

    Wash and peel the potatoes. Slice them thinly using a mandoline slicer or sharp knife to achieve uniform thickness for even cooking.

    Soak the Potatoes

    Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accurate temperature control.

    Fry the Chips

    Drain the soaked potatoes and pat them dry with paper towels. Carefully add a handful of potato slices to the hot oil, being cautious not to overcrowd the pot. Fry until golden brown, about 3-4 minutes.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain excess oil. While they're still hot, sprinkle salt over the chips to taste.

    Cool and Serve

    Allow the chips to cool slightly before serving. Enjoy them fresh with your favorite dip.
