Sandwich Preparation

    Prepare the Jalapeño

    Slice the jalapeño in half lengthwise and remove the seeds for less heat, if desired. Grill or roast the halves until they are slightly charred and tender.

    Grill the Chicken

    Season the chicken breast with salt and pepper. Grill on medium heat for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Assemble the Sandwich

    On one slice of bread, spread the guacamole. Place the grilled chicken breast on top, followed by the grilled jalapeño halves, and top with pepper jack cheese. Spread Sriracha aioli on the other slice of bread and close the sandwich.

    Grill the Sandwich

    Heat a skillet over medium heat. Add a little olive oil or butter and grill the sandwich for about 3-4 minutes on each side until the bread is golden brown and the cheese is melted.

    Cut the Potatoes

    Wash and peel the potatoes. Cut them into thin strips to create fries.

    In a large bowl, toss the potato strips with olive oil and salt until evenly coated.

    Preheat the oven to 425°F (220°C). Spread the fries on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until they are golden and crispy.
