Prepare the Tortillas
Begin by cutting the corn tortillas into triangles. Heat the vegetable oil in a large frying pan over medium heat.

Fry the Tortillas
Once the oil is hot, carefully add the tortilla triangles in batches, frying them until they are golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.

Cook the Bison
In a separate skillet, add the ground bison and cook over medium heat until browned, breaking it up as it cooks, about 5-7 minutes.

Add Spices and Tomatoes
Add the canned diced tomatoes, chili powder, cumin, garlic powder, onion powder, salt, and black pepper to the cooked bison. Stir well and simmer for 10 minutes.

Assemble the Nachos
On a large serving platter, layer the fried tortilla chips, followed by the bison chili mixture. Sprinkle the pepper jack cheese generously on top.

Melt the Cheese
Place the assembled nachos under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Add Fresh Toppings
Remove from the oven and top with sour cream, sliced jalapeños, chopped green onions, and fresh cilantro.
