Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Meatloaf Ingredients
In a large bowl, combine ground bison, breadcrumbs, eggs, sautéed onions and garlic, Worcestershire sauce, ketchup, salt, pepper, and oregano. Mix until just combined.

Shape and Bake
Transfer the meat mixture to a loaf pan, shaping it into a loaf. Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.

Assemble the Sandwich
Slice the ciabatta rolls in half. Place a slice of pepper jack cheese on the bottom half, then layer with slices of the baked bison meatloaf, and top with grilled onions. Add the top half of the ciabatta roll.

Serve with Fries
Prepare fresh-cut fries according to your preference (baked or fried). Serve the bison meatloaf sandwiches with a side of fresh-cut fries.
