    Prepare the Patty Mixture

    In a large mixing bowl, combine the ground beef and ground bison. Season with salt, black pepper, garlic powder, and onion powder. Mix gently until just combined.

    Form the Patties

    Divide the meat mixture into 8 equal portions and form each into a patty about 1/2 inch thick.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach an internal temperature of 160°F (71°C).

    Add Cheese

    During the last minute of cooking, place a slice of American cheese on each patty to melt.

    Assemble the Sliders

    Place each patty with melted cheese onto a burger bun and cover with the other half of the bun.

    Prepare the Potatoes

    Wash and slice the potatoes thinly using a mandoline or sharp knife. Aim for about 1/8 inch thickness.

    Season the Chips

    In a large bowl, toss the potato slices in olive oil, salt, paprika, and black pepper until evenly coated.

    Bake the Chips

    Preheat the oven to 400°F (200°C). Spread the potato slices in a single layer on a baking sheet. Bake for 15-20 minutes, or until they are crispy and golden brown. Flip halfway through for even cooking.

    Cool and Serve

    Remove the chips from the oven and let them cool slightly before serving alongside the sliders.
