Preparation

    Caramelize the Onions

    In a skillet over medium heat, cook the sliced onion and bacon together until the onions are soft and caramelized, about 15-20 minutes. Stir occasionally to prevent burning. Once caramelized, remove from heat and set aside.

    Prepare the Garlic Aioli

    In a small bowl, combine the minced garlic, mayonnaise, lemon juice, salt, and pepper. Mix well and set aside.

Cooking the Meat

    Form and Cook the Patties

    In a large bowl, combine the ground beef and ground bison. Season with salt and pepper. Form into patties, about 1/2 inch thick.

    Grill or Pan-Fry the Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for 4-5 minutes per side or until they reach your desired doneness. During the last minute of cooking, top each patty with Gruyère and blue cheese. Cover to melt the cheese slightly.

Assembly

    Build the Avalon Burger

    On the bottom half of a bun, spread a generous amount of the garlic aioli. Place the cheese-topped patty on the bun, followed by a spoonful of the caramelized onions and a handful of baby arugula. Top with the other half of the bun.
