    Prepare the Cod

    Rinse the cod fillets under cold water and pat them dry with paper towels.

    Bread the Cod

    Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with bread crumbs. Dip each cod fillet first in flour, then in egg, and finally coat with bread crumbs.

    Fry the Cod

    Heat oil in a large skillet over medium heat. Add the breaded cod fillets and fry until golden brown and cooked through, about 4-5 minutes per side. Remove from skillet and place on paper towels to drain excess oil.

    Assemble the Sandwich

    On each cracked wheat bun, place a fried cod fillet and top with a lettuce leaf. Spread a generous amount of chive caper tartar sauce on top.

    In a bowl, combine mayonnaise, capers, chopped chives, lemon juice, salt, and pepper. Mix well until all ingredients are thoroughly combined.

    In a large bowl, combine chopped kale, olive oil, lemon juice, salt, and pepper. Massage the kale with your hands for about 2-3 minutes until it softens.

    Preheat your oven to 425°F (220°C). Toss the cut potatoes with olive oil and salt in a bowl.
