    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick). Place the cut fries in a bowl of cold water to soak for at least 30 minutes to remove excess starch.

    Prepare the Onions

    Peel and slice the onions into rings, about 1/4 inch thick. Separate the rings and place them in a bowl.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the ice-cold water until you achieve a smooth batter.

    Heat the Oil

    In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature.

    Fry the Fries

    Drain the soaked fries and pat them dry with paper towels. In batches, carefully add the fries to the hot oil, frying until they are golden brown and crispy, about 4-5 minutes. Remove them with a slotted spoon and drain on paper towels.

    Dip each onion ring into the batter, allowing any excess to drip off. Carefully place the battered onion rings into the hot oil in batches, frying until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
