Seasonal Vegetables

Method

Prepare the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

Prepare the Vegetables

  1. 3

    Chop and Season Vegetables

While the salmon is marinating, wash and chop the asparagus, bell peppers, and zucchini into bite-sized pieces. In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper.

  2. 4

    Grill the Vegetables

Place the seasoned vegetables in a grill basket or directly on the grill. Grill for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.

Grill the Salmon

  1. 5

    Grill the Salmon Fillets

Remove the salmon from the marinade and place it skin-side down on the preheated grill. Grill for about 6-8 minutes on each side, or until the salmon flakes easily with a fork (internal temperature should reach 145°F or 63°C).

Serve

  1. 6

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate. Optionally, drizzle with additional lemon juice before serving.
