Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it's hot enough for baking the cakes.
- 2
Prepare Ramekins
Grease four ramekins with butter and lightly dust them with flour to prevent sticking. Place them on a baking sheet for easier handling.
Making the Cake Batter
- 3
Melt Chocolate and Butter
In a double boiler or microwave, melt the unsweetened chocolate and unsalted butter together until smooth. Stir occasionally to prevent burning.
- 4
Combine Sugar and Eggs
In a mixing bowl, whisk together granulated sugar, large eggs, and large egg yolks until the mixture is light and fluffy.
- 5
- 6
Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate mixture, then gently fold it in with a spatula. Finally, add the vanilla extract and mix until just combined.
Baking the Cakes
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full to allow for rising.
- 8
Bake
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft. Keep an eye on them to avoid overbaking.
- 9
Cool Slightly
Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes before inverting them onto plates.
Serving
- 10
Serve with Ice Cream
Carefully invert each lava cake onto a plate, allowing the gooey center to flow out. Serve immediately with a scoop of vanilla ice cream on top and fresh berries, if desired.
