    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

    Form the crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Make sure it's packed tightly and evenly. Bake for 10 minutes, then remove from the oven and let it cool.

Filling

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in granulated sugar and continue to beat until well combined.

    Add remaining ingredients

    Add sour cream and vanilla extract to the cream cheese mixture and blend until smooth. Finally, add eggs one at a time, mixing well after each addition.

    Bake the cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 55-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

    Chill the cheesecake

    After cooling, refrigerate the cheesecake for at least 4 hours, or overnight for best results.

Topping

    Prepare the topping

    Just before serving, wash the fresh mixed berries and pat them dry. In a small bowl, sprinkle the powdered sugar over the berries and gently toss to coat.

    Serve the cheesecake

    Remove the sides of the springform pan from the cheesecake. Top the chilled cheesecake with the sugared berries and slice into wedges to serve.
