Directions
Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes until it blooms.
Blend the Raspberries
In a blender, puree the fresh raspberries with half of the granulated sugar until smooth. Strain the mixture through a fine-mesh sieve to remove the seeds, if desired.
Dissolve the Gelatin
In a small saucepan, heat the bloomed gelatin over low heat until fully dissolved. Stir this into the raspberry puree along with the vanilla extract.
Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.
Combine Mixtures
Gently fold the raspberry mixture into the whipped cream and egg whites until well combined.
Chill the Mousse
Spoon the mousse into individual serving dishes or glasses. Refrigerate for at least 2 hours or until set.
Serve
Garnish with additional raspberries before serving, if desired.
