Cook Polenta
In a pot, bring the vegetable broth to a boil. Gradually whisk in the polenta, stirring constantly to prevent lumps. Reduce heat to low and cook for about 30 minutes, stirring frequently until thickened. Remove from heat.

In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes until softened. Add minced garlic and spinach, cooking until spinach is wilted. Stir in the canned diced tomatoes and season with salt, black pepper, and Italian seasoning. Cook for another 5 minutes.

In a large mixing bowl, combine the cooked polenta with the sautéed vegetable mixture. Stir in half of the mozzarella cheese and half of the Parmesan cheese.
