Prepare the Chicken

In a large pot or Dutch oven, melt 2 tablespoons of butter over medium heat. Add the chicken thighs and cook until browned on both sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

In the same pot, add the remaining 2 tablespoons of butter. Once melted, stir in the flour to create a roux. Cook, stirring constantly, until the roux is a deep golden brown color, approximately 10-15 minutes.

Add the chopped onion, bell pepper, celery, and garlic to the roux. Cook for another 5 minutes until the vegetables are softened.

Return the chicken to the pot, along with the corn, chicken broth, Cajun seasoning, salt, and black pepper. Stir well to combine.

Bring the mixture to a simmer. Reduce heat to low and cover. Let it cook for about 30 minutes, stirring occasionally, until the chicken is cooked through and the flavors meld.

Remove the chicken and shred it into bite-sized pieces. Return it to the pot, stir to combine, and serve hot, garnished with sliced green onions.
