Honey Lime Salmon

Blistered Green Beans

Crispy Quinoa

Method

Honey Lime Salmon

  1. 1

    Marinate the Salmon

In a small bowl, whisk together honey, lime juice, olive oil, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

  2. 2

    Cook the Salmon

Preheat the grill or a skillet over medium-high heat. Remove salmon from the marinade and grill for 4-5 minutes on each side, or until fully cooked and flaky. Garnish with chopped cilantro before serving.

Date Cabbage Slaw

  1. 3

    Prepare the Slaw

In a large bowl, combine the shredded cabbage, grated carrots, and chopped dates. In a separate small bowl, whisk together olive oil, apple cider vinegar, salt, and black pepper.

  2. 4

    Mix the Slaw

Pour the dressing over the cabbage mixture and toss well to combine. Let the slaw sit for at least 10 minutes to allow the flavors to meld.

Blistered Green Beans

  1. 5

    Cook the Green Beans

In a large skillet, heat olive oil over medium-high heat. Add green beans and season with garlic powder, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until beans are blistered and tender.

Crispy Quinoa

  1. 6

    Cook the Quinoa

Rinse quinoa under cold water. In a saucepan, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.

  2. 7

    Crisp the Quinoa

In a skillet, heat olive oil over medium heat. Add the cooked quinoa and season with salt. Cook for 5 minutes, stirring occasionally, until the quinoa is crispy.
