Prepare the Mushrooms

Preheat your oven to 400°F (200°C). Clean the mushrooms with a damp paper towel and slice them into thin pieces.

Roast the Mushrooms

In a mixing bowl, combine the sliced mushrooms, olive oil, minced garlic, fresh thyme, salt, and black pepper. Toss everything together until the mushrooms are well coated. Spread the mushrooms on a baking sheet in a single layer and roast in the preheated oven for about 15-20 minutes or until they are golden and tender.

Prepare the Cauliflower Crust

While the mushrooms are roasting, prepare the cauliflower crust according to package instructions, or if homemade, spread it out on a pizza stone or baking sheet lined with parchment paper.

Assemble the Pizza

Spread the whipped ricotta evenly over the baked cauliflower crust. Sprinkle the roasted mushrooms over the ricotta layer.

Add Cheese and Bake

Top the pizza with the four cheese blend. Adjust the seasoning with red pepper flakes, salt, and black pepper as desired. Bake in the oven for an additional 10-15 minutes or until the cheese is melted and bubbly.

Remove the pizza from the oven, let it cool for a couple of minutes, slice it up, and serve warm.
