For the Sesame Fried Chicken

Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and marinate them with soy sauce, sesame oil, minced garlic, and grated ginger for at least 30 minutes.

Breading
In a shallow dish, add cornstarch. In another bowl, beat the eggs. Dip each marinated chicken piece first in the cornstarch, then in the egg mixture, ensuring they are well-coated.

Fry the Chicken
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Drain on paper towels and sprinkle with sesame seeds.
For the Tempura Broccoli

Prepare the Batter
In a bowl, mix the all-purpose flour, salt, and ice water until just combined. Do not overmix; lumps are okay.

Fry the Broccoli
Heat oil in a separate pot to 350°F (175°C). Dip each broccoli floret into the batter and fry until golden brown, about 3-4 minutes. Drain on paper towels.

In a bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix until smooth and well combined.
For the Coconut Jasmine Rice

In a saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
