Soup Preparation

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, bell pepper, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

    Add Tomatoes and Broth

    Stir in the canned diced tomatoes and vegetable or chicken broth. Bring to a simmer.

    Season the Soup

    Add cumin, chili powder, salt, and black pepper. Adjust seasoning to your taste.

    Finish with Lime and Cilantro

    Add lime juice and fresh cilantro just before serving. Stir well and let simmer for an additional 5 minutes.

Tortilla Strips Preparation

    Cut and Fry Tortillas

    Cut the corn tortillas into strips. In a frying pan, heat enough oil over medium heat. Fry the tortilla strips until they are golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

Serving

    Assemble the Soup

    Ladle the soup into bowls. Top with fried tortilla strips, shredded cheddar, Monterey Jack cheese, and a generous scoop of pico de gallo.

    Garnish and Serve

    Garnish with additional cilantro if desired. Serve hot.
