Prepare the Steaks

Remove the New York strip steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.

Season the Steaks

Rub each steak with olive oil. Season generously with kosher salt, black pepper, and garlic powder on both sides. If using, sprinkle fresh rosemary on top.

Preheat the Grill or Skillet

Preheat your grill to high heat, or heat a large cast-iron skillet over medium-high heat. You want it hot enough to sear the steaks.

Cook the Steaks

Place the steaks on the grill or skillet. Sear for 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer to check; 130°F (54°C) is medium-rare.

Add Butter

In the last minute of cooking, add a tablespoon of butter to the skillet or grill, and baste the steaks with the melted butter for added flavor.

Rest the Steaks

Once cooked, remove the steaks from the heat and let them rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute.

Slice the steaks against the grain, serve with your choice of sides, and enjoy!
