Preparation Directions

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, salt, and black pepper. Whisk the ingredients together until well blended.

  2. 2

    Marinate the Quail

Place the whole quail in the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best flavor.

  3. 3

    Prepare the Jalapeño

While the quail is marinating, slice the jalapeño into thin rings, discarding the seeds if a milder flavor is desired.

  4. 4

    Wrap the Quail

Remove the marinated quail from the refrigerator. Take each quail and wrap it with two slices of bacon, securing the ends with a toothpick if necessary.

  5. 5

    Skewer the Quail

On a skewer, thread one wrapped quail followed by a slice of jalapeño. Repeat until all quail are used, creating four skewers.

  6. 6

    Grill the Skewers

Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the bacon is crispy and the quail is cooked through.

  7. 7

    Serve

Remove the skewers from the grill and let them rest for a few minutes. Serve warm as an appetizer or main dish.
