Soup Preparation

    Sauté Onions

    In a large pot, melt the unsalted butter over medium heat. Add the sliced yellow onions and cook for about 15-20 minutes, stirring frequently, until the onions are caramelized and golden brown.

    Once the onions are caramelized, add the minced garlic and sauté for an additional 2-3 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes.

    Add Broth and Seasonings

    Add the beef broth, Worcestershire sauce, thyme, salt, and black pepper. Stir to combine and bring the soup to a boil.

    Simmer the Soup

    Reduce the heat to low and let the soup simmer uncovered for about 30-40 minutes to allow the flavors to meld.

Serving Preparation

    Prepare Bread

    While the soup is simmering, preheat your oven to 400°F (200°C). Place the slices of baguette or French bread on a baking sheet.

    Toast the bread in the oven for about 5-7 minutes until golden brown and crispy.

    Ladle the hot soup into oven-safe bowls. Top each bowl with a slice of toasted bread, then sprinkle generously with provolone and Parmesan cheese.
