    Prepare the Roast

    Take the prime rib roast out of the refrigerator and let it sit at room temperature for about 1 hour before cooking.

    Preheat the Oven

    Preheat your oven to 200°F (93°C) for slow roasting.

    Season the Roast

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, chopped fresh rosemary, and thyme. Rub the mixture all over the prime rib roast. Drizzle olive oil over the roast and rub it in evenly.

    Roast the Prime Rib

    Place the seasoned roast on a rack in a roasting pan, fat side up. Insert a meat thermometer into the thickest part of the roast, avoiding bone. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, which should take about 4-5 hours.

    Rest the Roast

    Once the roast reaches the desired temperature, remove it from the oven and cover it loosely with aluminum foil. Let it rest for at least 20-30 minutes before carving to allow the juices to redistribute.

    After resting, carve the prime rib against the grain into slices and serve with your favorite sides and au jus.
