    Prepare the Steak

    Remove the porterhouse steak from the refrigerator and let it come to room temperature for about 30-60 minutes before cooking. This ensures even cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and black pepper. Make sure to rub the seasoning into the meat for better flavor.

    Preheat the Grill or Skillet

    Preheat your grill to high heat (about 450-500°F) or heat a cast-iron skillet over high heat on the stove. If using a skillet, add olive oil and let it heat until shimmering.

    Add Garlic and Rosemary

    If using a skillet, add the garlic cloves and rosemary sprigs to the oil. This will infuse the oil with flavor.

    Cook the Steak

    Place the steak on the grill or in the skillet. Cook for about 4-5 minutes on each side for medium-rare, using a meat thermometer to check for doneness (130-135°F).

    Rest the Steak

    Once cooked to your desired doneness, remove the steak from the heat and let it rest on a cutting board for 10-15 minutes. This allows the juices to redistribute.
