    Prepare the Filling

    In a mixing bowl, combine the shredded Monterey Jack cheese and sliced mild jalapeños.

    Stuff the Shrimp

    Take each large shrimp and carefully make a slit along the back, creating a pocket. Stuff each shrimp with a generous amount of the cheese and jalapeño mixture.

    Set Up Breading Station

    In three separate shallow bowls, place the all-purpose flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and black pepper in the third.

    Bread the Shrimp

    Coat each stuffed shrimp in flour, shaking off the excess. Dip them into the beaten eggs, and then coat with the breadcrumb mixture, pressing gently to ensure the breadcrumbs stick.

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully place the breaded shrimp into the hot oil, frying in batches if necessary to avoid overcrowding. Fry for 3-4 minutes on each side, or until golden brown and cooked through.
