Mashing
Combine the corn, malted barley, and rye in a large mash tun.

Heating
Add hot water to the mash and heat to approximately 150°F (65°C). Stir well and maintain this temperature for about 1 hour.

Lautering
After mashing, transfer the mixture to a lauter tun. Separate the liquid wort from the grain solids.

Fermentation
Add the yeast to the wort in a fermentation vessel. Allow to ferment for about 5-7 days until bubbling has stopped.

Transfer the fermented wash to a pot still. Heat slowly to distill the alcohol. Collect the distillate.

Pour the distillate into charred oak barrels. Seal and store in a temperature-controlled environment for a minimum of 2 years.
