Filet Mignon Preparation

Season the Filets
Sprinkle salt and black pepper evenly on both sides of the filet mignon pieces.

Rest the Filets
Remove the filets from the skillet and let them rest on a plate for at least 5 minutes.
Crab Cakes Preparation

Mix Ingredients
In a large bowl, combine lump crab meat, breadcrumbs, mayonnaise, Dijon mustard, egg, chopped parsley, Old Bay seasoning, salt, and black pepper. Mix gently to avoid breaking up the crab meat.

Form Cakes
Shape the mixture into small cakes weighing about 2 oz each. Place on a baking sheet lined with parchment paper.

Cook Crab Cakes
In a skillet, heat a small amount of oil over medium heat. Add the crab cakes and cook for about 3-4 minutes per side until golden brown.
Hollandaise Sauce Preparation

Prepare the Butter
Melt the butter in a small saucepan over low heat and let it cool slightly.

Combine with Butter
Slowly drizzle in the melted butter while continuously whisking until the sauce is thick and creamy. If the sauce is too thick, add a little warm water.

Add salt and cayenne pepper to taste, whisking to combine.
