Method

Preparing the Filet Mignon

    Season the Steaks

    Sprinkle the center cut filet mignon pieces generously with salt and black pepper on both sides.

    Sear the Steaks

    In a large skillet over medium-high heat, add the olive oil. Once hot, add the seasoned filets and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Rest the Steaks

    Remove the filets from the skillet and let them rest on a plate for at least 5 minutes.

Making the Bearnaise Sauce

    Prepare the Shallots

    Finely chop the shallots and place them in a small saucepan with the white wine vinegar and 1 tablespoon of water. Simmer over low heat until the liquid is reduced by half.

    Melt the Butter

    In another saucepan, melt the unsalted butter over low heat until completely liquid and hot.

    Combine Ingredients

    In a bowl, whisk together the egg yolks and the reduced shallot mixture. Gradually add the melted butter while continuously whisking until the sauce thickens.

    Finish the Sauce

    Stir in the fresh tarragon, lemon juice, salt, and black pepper to taste. Keep warm until ready to serve.
