    Prepare the Filets

    Remove the filet mignon from the packaging and allow them to come to room temperature for about 30 minutes before cooking.

    Drizzle the olive oil over the filets and season generously with kosher salt and black pepper on both sides.

    Preheat the Pan

    Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat. Allow it to get very hot, about 5 minutes.

    Cook the Filets

    Place the filets in the hot pan and sear for about 4-5 minutes on one side without moving them to develop a nice crust.

    Flip and Add Aromatics

    Flip the filets and add butter, crushed garlic cloves, and fresh rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, basting the filets with the melted butter and aromatics.
