Preparation Steps
- 1
Marinate the Chicken
In a large bowl, combine yogurt, minced garlic, lemon juice, olive oil, paprika, cumin, salt, and pepper. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- 2
Cook the Chicken
Preheat the grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-8 minutes on each side or until cooked through and juices run clear.
- 3
Prepare the Rice
While the chicken is cooking, rinse the rice under cold water until the water runs clear. In a pot, add 4 cups of water and bring to a boil. Add the rice, cover, and reduce heat to low. Cook for about 15-20 minutes or until rice is tender and water is absorbed.
- 4
Prepare the Salad
In a bowl, toss the mixed greens with your favorite salad dressing. Serve alongside the chicken and rice.
- 5
Serve
Plate the grilled chicken with a side of rice and mixed green salad. Optionally serve with fries.
