Prepare the Rice
Rinse the rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a large saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and let simmer for about 15 minutes or until the rice is tender and the water is absorbed.

Combine Ingredients
Once the rice is cooked, add the whole milk, sugar, salt, ground cinnamon, and vanilla extract to the saucepan. Stir well to combine.

Cook the Pudding
Bring the mixture to a gentle boil over medium heat, then reduce to low heat. Cook, stirring frequently, for about 20-25 minutes, or until the mixture thickens to a pudding-like consistency.

Add Nuts and Raisins
Stir in the chopped nuts and raisins (if using) during the last 5 minutes of cooking. Adjust sweetness if needed.

Remove from heat and let cool slightly before serving. Rice pudding can be served warm or chilled, garnished with extra nuts or a sprinkle of cinnamon.
