Preparation

    Prepare the Syrup

    In a saucepan, combine sugar and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Add lemon juice and rosewater, simmer for another 5 minutes. Set aside to cool.

    Prepare the Filling

    In a bowl, mix ricotta cheese, mozzarella cheese, sugar, and vanilla extract until well combined.

    Prepare the Kataifi

    Preheat the oven to 180°C (350°F). Melt the butter and separate the kataifi pastry strands. Toss the strands in melted butter to coat well.

Assembly

    Layer the Pastry and Filling

    In a greased baking dish, layer half of the buttered kataifi pastry evenly. Spread the cheese filling over the pastry. Top with the remaining kataifi pastry, pressing down gently.

Baking

    Bake the Konafa

    Bake in the preheated oven for 30-35 minutes, or until golden brown and crispy on top.

    Soak in Syrup

    Remove from the oven and pour the cooled syrup evenly over the hot konafa. Allow it to soak for at least 30 minutes.

Serving

    Garnish and Serve

    Sprinkle with chopped pistachios and ground cinnamon before serving. Cut into squares and enjoy!
