Ravioli Preparation

    Make the Dough

    In a large bowl, mix the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Make the Filling

    In a bowl, combine ricotta, romano, and mozzarella cheeses. Mix well and set aside.

    Roll and Fill

    Roll out the dough on a floured surface until thin. Cut into 3-inch squares. Place a teaspoon of filling in the center of each square. Fold the dough over to create a triangle and seal the edges well with your fingers or a fork.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for 4-5 minutes or until they float. Remove with a slotted spoon and set aside.

Vodka Sauce Preparation

    Make the Sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add crushed tomatoes, vodka, salt, pepper, and red pepper flakes. Simmer for 10 minutes.

    Finish the Sauce

    Stir in heavy cream and chopped basil. Cook for another 5 minutes until the sauce thickens.

    Combine

    Add the cooked ravioli to the sauce and gently toss to coat. Serve hot with additional basil and cheese, if desired.
