1. Sauté the Vegetables

2. Make the Roux
Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for about 2 minutes to eliminate the raw flour taste.
3. Add the Stock
Gradually whisk in the chicken or seafood stock, ensuring there are no lumps. Bring the mixture to a gentle boil, then reduce the heat and simmer for 10 minutes.
4. Stir in Cream and Seasonings
Slowly add the heavy cream to the pot, stirring to combine. Add the Old Bay seasoning, cooked crab meat, and sherry wine. Season with salt and black pepper to taste.
5. Simmer and Serve
Allow the soup to simmer for another 10-15 minutes, stirring occasionally. Serve hot, garnished with chopped chives.
