Preparation

    Prepare the Seafood

    In a skillet over medium heat, add olive oil. Once hot, add shrimp, crab meat, and scallops. Season with salt and black pepper. Cook for about 5-7 minutes or until shrimp is pink and scallops are opaque. Remove from heat and set aside.

    Prepare the Eggs

    In a mixing bowl, whisk the eggs until well combined. Season with a pinch of salt and pepper.

Cooking

    Cook the Omelette

    In the same skillet, add a little more olive oil if needed and pour in the whisked eggs. Cook over medium-low heat until the edges begin to set, gently lifting the edges with a spatula to allow the uncooked egg to flow underneath.

    Add Filling

    When the omelette is mostly set but still a little runny on top, add the cooked seafood and sprinkle mozzarella cheese on one half of the omelette. Fold the other half over the filling and cook for another 2-3 minutes until the cheese melts.

Serving

    Plate and Serve

    Carefully slide the omelette onto a plate. Drizzle with hollandaise sauce and garnish with fresh parsley. Serve immediately.
