Prepare the Ingredients
Gather all the ingredients and set them out on a clean work surface.

Assemble the Sandwich
Spread 1 tablespoon of Thousand Island dressing on one side of each slice of rye bread. On the non-dressed side of 2 slices, layer the corned beef, Swiss cheese, and sauerkraut.

Top and Grill
Place the other two slices of bread on top of the assembled sandwiches, dressing side facing up. Heat a skillet or griddle over medium heat and melt a little butter if desired. Grill the sandwiches for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Serve
Remove the sandwiches from the heat, slice in half if desired, and serve hot with additional Thousand Island dressing on the side.
