Salmon Preparation

Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare Salmon
Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, lemon juice, and season with salt and pepper. Sprinkle chopped basil on top.

Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Make Sauce
In a small saucepan over medium heat, add heavy cream, lemon zest, salt, and pepper. Stir frequently until the sauce is heated through and slightly thickened, about 5-7 minutes.

In a medium saucepan, combine brown rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes or until rice is tender and water is absorbed.

In a large skillet, heat olive oil over medium heat. Add mixed vegetables, season with salt and pepper, and sauté for 5-7 minutes until they are tender but still crisp.
