Method

Preparing the Shrimp

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Season the Shrimp

In a bowl, toss the jumbo shrimp with olive oil, salt, and black pepper. Set aside.

Preparing the Filling

  1. 3

    Sauté Spinach and Garlic

In a large skillet, melt 1 tablespoon of butter over medium heat. Add garlic and sauté for 1 minute, then add chopped spinach. Cook until wilted, about 2-3 minutes.

  2. 4

    Combine Filling Ingredients

In a mixing bowl, combine the sautéed spinach, crabmeat, feta, and cheddar cheese. Mix well.

Making the Lobster Cream Sauce

  1. 5

    Prepare the Sauce

In a saucepan, melt 1 tablespoon of butter over medium heat. Add lobster stock and heavy cream. Bring to a simmer, then season with salt, black pepper, and lemon juice. Cook for about 5-7 minutes until slightly thickened.

Assembling and Baking

  1. 6

    Stuff the Shrimp

Place the seasoned shrimp on a baking dish. Spoon the filling mixture onto each shrimp.

  2. 7

    Add Sauce and Bake

Pour the lobster cream sauce over the stuffed shrimp. Bake in the preheated oven for 15-20 minutes, or until shrimp are cooked through and opaque.

Cooking the Sides

  1. 8

    Cook the Brown Rice

While the shrimp is baking, cook the brown rice according to package instructions.

  2. 9

    Prepare the Vegetable

Steam or sauté the daily vegetable until tender.
