Fried Oysters Preparation

Prepare the Oysters
Rinse the fresh oysters under cold water, then carefully shuck them, removing any shell fragments. Set them aside on a clean plate.

Make the Breading
In a shallow bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.

Coat the Oysters
Dip each oyster into the batter, allowing any excess to drip off, then dredge it in the cornmeal mixture to coat well.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters
Carefully place the coated oysters in the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

Drain and Serve
Use a slotted spoon to remove the fried oysters from the oil and drain them on paper towels. Serve hot with lemon wedges and tartar sauce.
