    Prepare the Ingredients

    Chop the ham, bacon, tomatoes, mushrooms, and onion into small pieces.

    Cook the Bacon and Vegetables

    In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside. In the same skillet, add the onion and mushrooms, cooking until they are soft. Add the diced tomatoes and cook for an additional 2 minutes.

    Beat the Eggs

    In a large bowl, beat the eggs with salt and pepper until well combined.

    Combine and Cook the Omelet

    Pour the beaten eggs into the skillet with the vegetables. Reduce the heat to low and let cook undisturbed for about 5 minutes, or until the eggs are set.

    Add Cheddar and Ham

    Sprinkle the cheddar cheese and cooked bacon over one half of the omelet. Carefully fold the other half over the filling.

    Serve

    Allow to cook for another minute to melt the cheese. Slide the omelet onto a plate and cut in half. Serve hot.
