Preparation Steps
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, black pepper, garlic powder, and dried oregano.
- 2
Bread the Chicken
Dip each chicken breast in the eggs, then coat with breadcrumbs evenly.
- 3
Cook the Chicken
Heat olive oil in a skillet over medium heat. Cook the breaded chicken breasts for about 4-5 minutes on each side until golden brown.
- 4
Bake the Chicken
Transfer the cooked chicken to a baking dish. Top each breast with marinara sauce, mozzarella, and Parmesan cheese. Bake in the preheated oven for about 15-20 minutes, until the cheese is melted and bubbly.
- 5
Prepare the Sub
While the chicken is baking, mix ricotta cheese with a pinch of salt and pepper. Slice the sub rolls in half and toast lightly if desired.
- 6
Assemble the Sub
Once the chicken is done baking, place a chicken breast on each sub roll, add a spoonful of ricotta, and drizzle with additional marinara sauce if desired. Close the rolls and serve.
