Cooking Chicken

Prepare the Chicken
In a small bowl, mix olive oil, paprika, cayenne pepper, garlic powder, salt, and black pepper to create a marinade. Rub this mixture all over the chicken breasts.

Cook the Chicken
Heat a skillet over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.
Preparing Elotes

Cook the Corn
Boil the corn on the cob for about 8-10 minutes until tender. Remove from water and let it cool slightly.

Prepare the Elotes
In a bowl, mix mayonnaise, lime juice, and chili powder. Brush this mixture over the corn, then sprinkle with cotija cheese and chopped cilantro.

Cook the Rice
In a saucepan, combine wild rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 45-50 minutes until the rice is tender and water is absorbed.
