Cooking Grits

    Prepare the Grits

    In a pot, bring water and salt to a boil. Slowly whisk in the stone ground grits. Reduce heat to low and cook, stirring frequently, for about 20-25 minutes until thickened.

    Add Cheese

    Stir in the milk, butter, and cheddar cheese until melted and creamy. Set aside and keep warm.

Making Mornay Sauce

    Create the Roux

    In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for about 1-2 minutes until bubbly.

    Add Milk and Cheese

    Gradually whisk in the milk until smooth and thickened. Remove from heat and stir in Parmesan cheese, salt, and pepper.

Cooking Toppings

    Fry the Eggs

    In a skillet, cook the eggs to your preference (sunny-side up, over-easy, etc.).

    In the same skillet, cook the sausage bacon until crispy.

Assembly
