Method

Prepare the Mornay Sauce

    Make the Roux

    In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 2 minutes until the mixture is golden and bubbling.

    Add Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue cooking until the sauce thickens, about 5 minutes.

    Finish the Sauce

    Remove from heat and stir in the Gruyere cheese, salt, and pepper until smooth.

Prepare the Pizza

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Prepare the Dough

    On a floured surface, roll out the pizza dough to fit your pizza stone or baking sheet. Transfer to the sheet and brush with olive oil.

    Add Toppings

    Spread the mornay sauce evenly over the dough. Sprinkle the mozzarella and cheddar cheese over the sauce. Evenly distribute the bacon and sausage on top.

    Bake

    Bake in the preheated oven for about 12-15 minutes or until the crust is golden and the cheese is bubbly.

    Add Eggs

    During the last 3 minutes of baking, carefully crack the sunny side up eggs on top of the pizza. Return to the oven to finish cooking.

    Serve

    Remove from the oven, let cool for a few minutes, slice, and serve warm.
