Falafel Preparation

Prepare the Falafel Mixture
In a food processor, combine the canned chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms.

Form the Falafel Balls
Transfer the mixture to a bowl and add flour. Mix well. Shape the mixture into small balls, about the size of a golf ball.

Fry the Falafel
Heat oil in a deep frying pan over medium heat. Fry the falafel balls in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
Rice Preparation

Cook the Rice
In a saucepan, combine the rice, water, and salt. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until the rice is tender and water is absorbed.
Serving

Assemble the Dish
Serve the falafel with cooked rice, hummus, salad, and pita bread. Drizzle with olive oil and lemon juice if desired.
