1. Prepare the Filling

In a skillet, heat a little oil over medium heat. Add the chopped onion and sauté until translucent. Add the ground meat and cook until browned. Stir in the pine nuts, parsley, cinnamon, salt, and pepper. Cook for an additional 5 minutes, then remove from heat and let cool.

2. Prepare the Dough

In a bowl, combine 2 cups of fine bulgur wheat, 1 teaspoon of salt, and enough water to soak the bulgur for about 30 minutes until it’s soft. Drain any excess water. Mix with 400 grams of ground lamb or beef, forming a dough-like consistency.

3. Form the Kibba

Take a handful of the dough and flatten it in your palm. Add a tablespoon of the filling in the center and fold the dough over to seal it, shaping it into an oval or a ball.

4. Cooking

Heat oil in a deep frying pan. Fry the kibba in batches until golden brown, about 4-5 minutes on each side. Drain on paper towels before serving.
