Prepare the Tomatoes
Wash the heirloom tomatoes, then slice them into thick rounds. Set aside.

Prepare the Cheese
Slice the fresh mozzarella cheese into thick rounds.

Toast the Bread
In a skillet or toaster, lightly toast the slices of Noble bread until golden brown.

Assemble the Dish
On each slice of toasted bread, spread a generous layer of basil pesto. Layer the sliced heirloom tomatoes on top, followed by slices of fresh mozzarella.
