Choux Pastry

    Prepare the Choux Pastry

    In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and add flour all at once. Stir until the mixture forms a ball and pulls away from the sides of the pan.

    Add Eggs

    Let the mixture cool slightly, then add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

    Shape and Bake

    Preheat the oven to 400°F (200°C). Using a pastry bag, pipe small mounds of dough onto a baking sheet lined with parchment paper. Bake for 20-25 minutes, until golden and puffed. Allow to cool completely.

Sweet Cream Ice Cream

    Mix Ingredients

    In a large bowl, whisk together heavy cream, whole milk, sugar, and vanilla extract until the sugar is dissolved.

    Chill and Churn

    Refrigerate the mixture for at least 2 hours, then churn in an ice cream maker according to the manufacturer's instructions. Freeze until firm.

Chocolate Ganache

    Make Ganache

    Chop the semisweet chocolate into small pieces and place in a bowl. Heat heavy cream in a saucepan until just boiling, then pour over the chocolate. Let sit for a few minutes, then stir until smooth.

Assembly

    Assemble Profiteroles

    Slice the cooled choux pastries in half, fill with sweet cream ice cream, and drizzle with chocolate ganache before serving.
