    Prepare the Potatoes

    Peel and chop the potatoes into even pieces. Place in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter, salt, and pepper. Mash until smooth and creamy. Keep warm.

    Cook the Haricots Verts

    In a pot of boiling water, blanch the haricots verts for 3-4 minutes until bright green. Drain and set aside.

    Sear the Chicken

    Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for 6-7 minutes on each side until golden brown and cooked through.

    Prepare the Demi-Glace

    Once the chicken is cooked, remove from the skillet and let rest. In the same skillet, add the chicken demi-glace and bring to a simmer, scraping up any bits from the bottom of the pan.

    Plate the Dish

    To serve, place a generous scoop of buttery mashed potatoes on the plate, add a portion of haricots verts, top with the seared chicken, and drizzle with the chicken demi-glace.
