Method

Preparing the Ribeye

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder. Let them sit at room temperature for 30 minutes.

    Cook the Steak

    Heat duck fat in a skillet over medium-high heat. Once hot, add the ribeye steaks. Cook for about 4-5 minutes on each side for medium-rare, adding fresh rosemary during the last minute of cooking. Remove the steaks and let them rest.

Making Duck Fat Fries

    Prepare the Potatoes

    Peel and cut the russet potatoes into fries. Soak them in water for at least 30 minutes, then drain and pat dry.

    Fry the Potatoes

    In a large pot, heat duck fat over medium heat. Once hot, carefully add the fries in batches. Fry until golden and crispy, about 5-7 minutes. Drain on paper towels and sprinkle with salt.

Cooking the Vegetables

    Sauté the Asparagus and Mushrooms

    In a separate pan, heat olive oil over medium heat. Add asparagus and sauté for about 3-4 minutes until tender. Add seasonal mushrooms and cook for an additional 2-3 minutes. Season with salt and black pepper.

    Blister the Tomatoes

    In the same pan, add cherry tomatoes and cook for 2-3 minutes until they blister. Remove from heat.
