Cheesecake Filling
- 1
Prepare the Crust
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and crumbly.
- 2
Form the Crust
Preheat the oven to 350°F (175°C). Line a mini muffin tin with paper liners. Press about 1 tablespoon of the crumb mixture into the bottom of each liner to form a crust.
- 3
Bake the Crust
Bake in the preheated oven for 5-7 minutes, or until lightly golden. Remove from the oven and allow to cool slightly.
- 4
Prepare the Filling
In a mixing bowl, beat together cream cheese, granulated sugar, vanilla extract, and eggs until smooth and creamy.
- 5
Fill the Crusts
Spoon the cheesecake filling over the cooled crusts, filling each liner about 3/4 full.
- 6
Bake the Cheesecakes
Return to the oven and bake for an additional 15-18 minutes, or until the filling is set and the tops are lightly golden.
- 7
Cool and Serve
Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Refrigerate for at least 2 hours before serving.
