Cheesecake Filling

    Prepare the Crust

    In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and crumbly.

    Form the Crust

    Preheat the oven to 350°F (175°C). Line a mini muffin tin with paper liners. Press about 1 tablespoon of the crumb mixture into the bottom of each liner to form a crust.

    Bake in the preheated oven for 5-7 minutes, or until lightly golden. Remove from the oven and allow to cool slightly.

    In a mixing bowl, beat together cream cheese, granulated sugar, vanilla extract, and eggs until smooth and creamy.

    Spoon the cheesecake filling over the cooled crusts, filling each liner about 3/4 full.
